CHICKEN LETTUCE WRAPS

 

1-2 pounds boneless skinless chicken thighs
romaine or butter lettuce
3 green onions, chopped
Thai peanut sauce

Cut chicken into bite size chunks and prepare marinade as directed.
Marinate chicken the morning of in fridge.
Cook chicken over medium heat until done, meanwhile simmer marinade in a separate skillet until reduced by half.  Move cooked chicken over into marinade.
Layer chicken, Thai peanut sauce and green onions over a single lettuce leaf and enjoy taco style!
