TACO PICKLED EGGS

 

2 cups vinegar
1 cup water
1 packet taco seasoning
1 dozen hard boiled eggs, peeled - use the directions for hard boiling HERE

Mix vinegar, water and seasoning in a pot and bring to a boil.  Once it's boiling, remove from heat.  Allow to cool a bit and put mixture and eggs in a container in the fridge for 24-48 hours.
Serve as is or with taco sauce.

*my husband loved these and thought they were perfect but I thought they were very vinegary and would like to add a cup of sugar to the mixture next time.
