SOURDOUGH WAFFLES WITH PEARL SUGAR

 

I wanted to come up with a recipe using sourdough discard with buttermilk from making homemade butter, along with pearl sugar.  Pearl sugar are those crunchy bits of sugar that do not dissolve when cooking and turn into this amazing caramelized crunch in every bite.  You can purchase pearl sugar but you can also make it at home.  I have not found a way that I love just yet so until I do, I encourage you to experiment.  I served these waffles with homemade butter and my Serrano pepper infused syrup - which was AMAZING on these!  The sweet crunch in these waffles with the salty butter and sweet and spicy syrup is like a party in your mouth!

2 cups flour
1 cup sourdough discard
1 cup buttermilk (may need more depending on how thick your discard is)
2 teaspoons baking powder
1 teaspoon baking soda
1 egg
1/2 teaspoon salt
1 1/2 cups sugar, made into pearl sugar in advance

If you didn't purchase it, make pearl sugar in advance for this recipe.  Whisk together all ingredients, except pearl sugar, gently fold in pearl sugar.

My Belgium waffle iron holds 3/4 cup batter and takes about 3 minutes to cook.

Top waffles with butter and syrup.
