PESTO

 

I made a batch of pesto to freeze in cubes so I could take them out of the freezer as needed.

2 cups fresh basil leaves
2 tablespoons pine nuts
1 tablespoon minced garlic
1/2 cup olive oil
1/2 cup fresh parmesan shavings

Process basil, nuts and garlic in a food processor until finely minced.  Drizzle in olive oil until combined.  Process cheese until combined.  Store in a jar in the fridge or freeze in cubes.
