LEMON CHICKEN SOUP

 

I saw this recipe on a Facebook page called Soup lover and gave it a try.  My whole family loved it!

1 tablespoon olive oil
1 onion, chopped
2-3 carrots, chopped
2-3 celery stalks, chopped
1 tablespoon minced garlic
3 chicken thighs
6 cups chicken stock
1 cup orzo (or rice)
2-3 lemons, juiced
2 egg yolks
fresh dill

Season chicken with salt and pepper.  Heat oil in a large stock pot.  Cook onion, carrots and celery in oil over medium heat for about 10 minutes.  Add garlic and cook for another minute.  Add chicken and stock.  
Bring to a boil and lower to simmer.  Cover and simmer for 15 minutes.
Remove chicken and add orzo or rice to pot.  Allow pot to simmer for 10 minutes.  
Shred chicken and add back to pot.
Whisk lemon juice and egg yolks together in a bowl.  Slowly add 2 ladles of soup in bowl while constantly stirring to temper the eggs.  Add this mixture to the soup and cook for 5 more minutes.
Add fresh dill and serve.
