SALMON AND RICE BOWL

1 cooked salmon fillet (or canned salmon or tuna)
*1 cup cooked sushi rice (plain rice is ok too)
1 tablespoon soy sauce or Japanese BBQ sauce (or to taste)
*kewpie mayo
sriracha
avocado
seaweed snacks (small roasted nori sheets, wasabi is my go to)
toasted sesame seeds and/or panko bread crumbs for crunch

Flake up the salmon fillet with a fork, mix with rice (heat up in microwave if you're using leftovers for 30 sec to 1 min).
Dash soy sauce or Japanese BBQ sauce over salmon and rice and mix throughly.  Drizzle mayo and sriracha over entire bowl.
Sprinkle with toasted sesame seeds and/or panko bread crumbs.
Serve with sliced avocado and wasabi flavored seaweed snacks.

*for sushi rice: Make 2 cups of any type of rice, while it's cooking heat up in a small bowl 1/2 cup rice vinegar, 1/4 cup sugar, 1 teaspoon salt, 2 teaspoons sesame oil until sugar is dissolved.  Mix rice and vinegar mixture together.  

*I purchased my kewpie mayo from amazon, you can also purchase from specialty asian markets.  Or make your own: 1 tablespoon mayo, 1/2 teaspoon rice vinegar, 1/8 teaspoon sugar - mix until well combined and sugar is dissolved.
