CAULIFLOWER FRIED RICE


This dish was fast and easy and soooo delicious, I highly recommend trying it!

1 tablespoon sesame oil
1 cup riced cauliflower
1 teaspoon minced garlic
1 egg
1 tablespoon soy sauce
1 tablespoon each: peas, carrots, chopped onion - optional
yum yum sauce, if desired (so good)

Heat sesame oil in a small skillet over medium high heat.  While oil is heating squeeze riced cauliflower in paper towels to remove excess moisture.  Put cauliflower, garlic and optional peas, carrots and onion in oil and cook until veggies are tender and cauliflower starts to brown.
Push everything to one side of your skillet and crack an egg over other side, stir constantly until scrambled and cooked through.
Add soy sauce and stir everything together, place in a bowl and drizzle with yum yum sauce.
