CHOCOLATE MINT CUPCAKES


Box of brownie mix, plus ingredients to make brownies
54 andes mint candies
16oz tub cool whip
8oz cream cheese

Prepare brownie batter and divide into 12 cupcake liners.  Bake at 350ยบ for about 20 minutes or until done.

Combine 12 candies with 3/4 cup cool whip and heat in microwave in 30 second intervals.  Stir until melted.  Allow to cool before spooning over brownies.

Combine 36 candies with 1 cup of cool whip and heat in microwave in 30 second intervals.  Stir until melted.  Beat cream cheese until smooth and then fold in melted chocolate and remaining cool whip.  Pipe over ganache.

Cut 6 candies in half and set in frosting to garnish.
