CANNOLI CUPCAKES


1 box yellow cake mix plus ingredients to make cupcakes
8oz cream cheese
15oz ricotta cheese
1 cup powdered sugar
2 cups semi sweet chocolate chips
1 stick butter 
12 mini cannolis, cut in half

Prepare and bake cupcakes.  Once cooled use a small scoop or spoon to scoop out the center of each cupcake.  Discard the centers or eat them as a snack.

In an electric mixer beat cream cheese and powdered sugar until smooth and creamy.  Mix in ricotta and 1 cup chocolate chips until just combined.

Spoon filling into the center of the cupcakes.  I like to pipe it out of a gallon ziplock bag.  If you do this, ensure you cut a hole in the corner of the bag large enough for the chocolate chips to fit through.

Melt 1 cup of chocolate chips with 1 stick of butter heating in microwave for 30 second intervals.  Once melted and smooth, drizzle over top of each cupcake and top with half a cannoli.  

Store in the fridge until ready to serve.
