PEACH UPSIDEDOWN CAKE



2 cups fresh or frozen peaches, peeled and sliced
1/4 cup butter
1/2 cup brown sugar
batter:
1/2 cup butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cup flour
1 1/4 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk

Heat 1/4 cup butter in 10" skillet until melted.  Sprinkle brown sugar over melted butter evenly.  Arrange peach slices around skillet.

Cream butter and sugar together for batter.  Mix in remaining ingredients and spread over peaches.

Bake at 350ยบ for 40-45 minutes.  Cool for 5 minutes before inverting onto platter.

*soak peaches in 2 tablespoons of bourbon for 10 minutes before assembling for an added kick, if desired.
