CARNITAS

4lbs boneless pork ribs
olive oil
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons salt
1 teaspoon pepper
1 onion, chopped
1 jalapeno, sliced
4 garlic cloves, minced
3/4 cup orange juice (or juice from 2 oranges)
corn or flour tortillas
fresh cilantro
2 additional onions, chopped

Drizzle a pot with about 2 tablespoons of olive oil.  Turn heat up to medium high.  Rub pork with oregano and cumin.  Sear ribs on each side for a couple minutes.  May have to do this in multiple batches.  Add salt, pepper, onion, jalapeƱo, garlic and orange juice.  Lower heat and place lid on pot.  Cook over medium low heat for 4 hours.  When meat is done, assemble tacos.

If desired, reduce pan juices by removing meat and turning heat up on pot to medium high.  Boil pan juice until it has reduced to a thick gravy to spoon over your meat.

Assemble tacos by serving with fresh cilantro and chopped onions.

We enjoy this meal with refried beans and Mexican street corn.
