BBQ NACHOS



2lb boneless pork ribs
olive oil
BBQ rub
2 tablespoons liquid smoke
corn tortilla chips
1lb (4 cups) Colby jack cheese or nacho cheese
pickled jalapeños
duke's Carolina gold BBQ sauce or sweet and spicy sweet baby rays BBQ sauce
sour cream

Drizzle a pot with about 2 tablespoons of olive oil.  Turn heat up to medium high.  Rub pork ribs with BBQ rub.  Sear ribs on each side for a couple minutes.  Pour in liquid smoke.  Lower heat and place a lid on the pot.  Cook over medium low heat for about 4 hours or until meat is falling apart.  When meat is ready, assemble nachos.

Spread chips out on a foil lined sheet pan.  Top with half the cheese.  Evenly spread out meat.  Top with other half of cheese.  Sprinkle jalapeños over cheese.  Generously apply BBQ sauce all over.

Bake at 400º for 15 minutes.  Top each portion with sour cream.
