RICE TOTS

 

Rice tots is one of our favorite snack/side items at a local restaurant we LOVE in Fernandina Beach, FL named Wicked Bao.  If you're ever in the area, I highly recommend it!  These rice tots came out great!

3 cups short grain (sushi) rice
1 cup rice vinegar
1/2 cup sugar
1 tablespoon salt
sweet chili sauce, for dipping

Cook sushi rice according to the package directions.  Mix together rice vinegar, sugar and salt, when rice is done stir this mixture in to season the rice.

Scoop about 2-3 tablespoons of rice into your hand and squeeze while turning to mold into the shape of a tater tot.  Use water on your hand to assist if rice starts sticking.  Lay rice tots out on wax paper.

Frying:  Heat oil to 350º and fry tots in a deep fryer or pan fry until lightly golden brown.  Remove and allow to drain on paper towels before serving.

Baking: Bake at 400º for 20 minutes each side or until lightly browned.

Serve with sweet chili sauce.
