SPLIT PEA SOUP


This soup is easy and delicious.  It makes a lot!  We were able to eat this for dinner twice and freeze a gallon ziplock bag for a later date.

1 ham bone
2lbs of dried split peas
2 onions, chopped
4 carrots, chopped
salt and pepper
1lb chopped ham, if needed

Place ham bone, peas, onions and carrots in a large stock pot.
Fill stock pot with water until it just covers the ham bone, season with salt and pepper.
Cover pot and bring to a boil.
Lower temp and simmer for 3 to 4 hours, stirring occasionally.

15 minutes before ready to serve
Remove ham bone and pick any good meat off and return to soup.  At this time add 1lb chopped ham if you like more meat in your soup - this is optional.
Simmer for 15 more minutes, season with more salt and pepper to taste and serve.
