SHEET PAN FISH DINNER

2 bags fresh spinach or kale
4-6 thinly sliced fish fillets (tilapia, mahi-mahi, flounder)
1-2 lemons, sliced
1 red onion, sliced
cherry tomatoes
1-2 tablespoons butter, cut each tablespoon into quarters
garlic salt
lemon pepper

Spread spinach or kale out on a sheet pan.  Lay lemon slices out on greens.  Lay fish fillets on top of lemon slices and sprinkle with garlic salt and lemon pepper.  Top each fish with an onion slice and dot of butter.
Lay tomatoes around on pan.
Bake at 350º for about 20 minutes or until fish is done.  It will take longer if your fillets are on the thicker side.

*This dish is prettier with the lemon on top on the fish but I thought it tasted better with the lemon underneath, you choose!
