DINNER ROLLS WITH HONEY CINNAMON BUTTER

4 cups flour
3/4 cup sugar
5 teaspoons yeast
1 1/4 teaspoon salt
3/4 cup milk
3/4 cup water
1/2 stick butter, plus 2 tablespoons, melted

honey cinnamon butter
1 stick butter, softened
2 tablespoons honey
1/2 teaspoon ground cinnamon
pinch of salt
whip all ingredients with a mixer until well combined.

Warm 3/4 cup water in microwave until about 110º.  Add yeast to water and cover for about 10 minutes to ensure yeast activates, you'll know when froth is rising in the cup.
In a mixing bowl combine flour, sugar, salt, milk, water with yeast and melted 1/2 stick butter.  Mix the dough for about 2 minutes until well combined.  Cover bowl with Saran Wrap and allow to rise for 1 hour in a warm place.
I put mine in the oven with a pot of boiling water beneath it.
Roll dough out on floured surface to about 3/4" thick and measures about 12x12".  Cut the dough into 4 even strips going side to side and then 5 strips going up and down, making 20 squares about 2x2".
Arrange squares about 1" apart on a baking sheet and allow to rise again in a warm area for about an hour or two.
When the rolls have doubled in size, bake at 375º for about 12 minutes or until tops are browned.  Serve with honey cinnamon butter.
Use melted 2 tablespoons butter to brush tops of rolls.
