HOT BEEF SUNDAES


4lb chuck roast
salt, pepper, garlic salt, onion salt and paprika
olive oil
2 onions, chopped
5 cloves garlic, minced
2 cups beef broth
2 cups red wine
1 jar Heinz beef gravy

2lbs potatoes, peeled and quartered
1 stick butter
1 1/2 cups milk
salt and pepper to taste

cherry tomatoes

Season roast with salt, pepper, garlic salt, onion salt and paprika.  Heat 1/4 cup olive oil in a dutch oven, sear meat on both sides for about 4 minutes.  Remove roast from pan and set aside.  Add 2 tablespoons olive oil to pan, brown onions and garlic.  Add meat back to pan on top of onions and garlic.  Add broth and red wine to pan, bring to a simmer for 3 hours.  Remove meat and chop it up.  Add meat and gravy back into pot.  Simmer until thickened.

Boil potatoes until tender.  Mash with butter, milk and salt and pepper.

Scoop mashed potatoes into bowls.  Drizzle with beef gravy and top with beef.  Sprinkle on cheese and top with a cherry tomato.
