COCONUT CURRY SOUP



My husband and I went to this restaurant in Pensacola, FL while on vacation called Kohn's.  We had the most amazing coconut curry soup we have ever tasted.  Highly recommend if you're ever in the area!  I tried to recreate the soup, this one came out pretty good but not quite there yet.  Will continue to tweak until it's just right but we still loved it!  I served it with dutch oven artisan bread!

1 tablespoon olive oil
2 tablespoons grated fresh ginger
3 tablespoons red curry paste
1 tablespoon curry powder
4 cups chicken broth
1 tablespoon brown sugar
2 cans coconut milk
5oz sliced shiitake mushrooms
2 tablespoons lime juice
1 bunch fresh cilantro, chopped 
salt

Heat oil in a stock pot over medium heat.  Cook ginger and curry powder briefly then add chicken broth, brown sugar, curry paste, coconut milk and mushrooms.  Cook until soup is heated through and mushrooms are tender.
Stir in lime juice and salt to taste, add chopped cilantro on top before serving.
