CLOUD EGGS


As many eggs as you want to make
salt
optional additional seasonings - I used chives and hell flakes
you could use red pepper flakes

Preheat oven to 350*
Separate egg whites from yolks, pour your egg whites in a mixing bowl and keep your egg yolk in half of the egg shell and place back in the egg carton to reserve for later.
Add a few pinches of salt to eggs whites and whisk on high speed for 3 to 4 minutes until you see stiff peaks.
Scoop mounds of egg white onto greased baking sheet, making a well in the center large enough to hold a yolk.
Bake clouds for 3 minutes.  They should be slightly browning on top and stiff to touch.
Gently add egg yolks to the center of each cloud and bake an additional 3 to 4 minutes.
Sprinkle with desired seasonings and serve.
