ITALIAN ALMOND PASTE COOKIES





(2) 8oz boxes almond paste
2/3 cup sugar
2 egg whites
1/3 cup almond flour
1 teaspoon almond extract 
dash of salt
sliced almonds

Beat egg whites with electric mixer until white and frothy.  Add in the rest of the ingredients (minus sliced almonds) and mix until well combined.

Use a small 1" cookie scoop to drop cookies onto parchment lined cookie sheet.  Press almond slices down on top of cookie.

Bake at 350Âș for 15 minutes or until golden.
Makes about 2 1/2 dozen 1" cookies

*These cookies do not flatten out as they bake, if you want a more rounded shape just push them down a bit harder when adding almonds.
