BAKLAVA

1 box (2 rolls) phyllo dough, thawed
1 1/5 sticks butter, melted
1 pound nuts (I only used pecans but you can use any combination)
1 teaspoon ground cinnamon
1/4 cup honey or corn syrup

simple syrup
1 cup sugar
1 cup water
1 tablespoon lemon juice
1/8 teaspoon vanilla extract

In a sauce pan bring simple syrup ingredients to a boil and then simmer on low for 10 minutes.  Take off heat and allow to cool completely.

Brush a 9x13 pan with melted butter and lay one roll of phyllo dough down.
In a food processor, pulse nuts, cinnamon and honey or corn syrup until coarsely chopped.
Spread nut mixture evenly over phyllo dough, reserving about 1/4 cup to sprinkle on top.
Lay the other roll of phyllo dough over nuts.
Cut the baklava diagonally into 1" squares.
Pour butter over baklava and rotate pan around making sure butter absorbs in.
Sprinkle with remaining nuts.
Bake for 45-50 minutes at 325*
As soon as you remove from oven pour the cooled simple syrup evenly over baklava.  
Allow to completely cool before enjoying.
