CRAB OR SALMON CAKES


I was walking around an antique store the other day and saw this kitchen towel with a crab cake recipe on it.  I decided to try this recipe with canned salmon since I'm allergic to crab and my family loved them!

(5) 4oz cans of salmon in water
1 cup panko breadcrumbs
1/4 cup mayonnaise
1 egg
2 tablespoons mustard
2 tablespoons worcestershire sauce
2 tablespoons lemon juice
1/4 teaspoon onion powder
dash of garlic powder

Mix all ingredients together and shape into several patties.  Put parchment paper on a large pan and place patties on parchment paper.  Refrigerate for several hours before baking.
Once out of fridge remove parchment paper from pan and spray pan with nonstick cooking spray.  Place patties back on the pan and broil on both sides for about 8-10 minutes each or until golden brown.

Serve with tartar sauce or yum yum sauce!
