ROASTED CARROTS

2 small bags carrots
olive oil
garlic salt
pepper
3 tablespoons butter
2 tablespoons honey

Toss carrots in olive oil, garlic salt and pepper.  Roast at 425* for 30 to 40 minutes or until tender.
While carrots are roasting, heat butter in a small sauce pan over medium high heat and simmer until it reaches a deep brown color.  Add honey and stir, remove from heat.
When carrots are done, drizzle with honey butter and serve.
