FRENCH ONION SOUP

I made this for two people to play around with the recipe.  You can easily double it to make more.

1 small onion or half of a large, thinly sliced
1 tablespoon butter
garlic salt
pepper
2 cups beef broth
1 tablespoon worcestershire sauce
croutons or toast
provolone cheese

Melt butter in a sauce pan.  Place onions in melted butter and sprinkle generously with garlic salt and pepper.  Cook onions on medium/high heat for about 10 minutes until very tender and caramelized. 

Add broth and worcestershire sauce.  Add more garlic salt to taste.  Simmer covered for 10 minutes.

Empty soup into crocks and sprinkle with croutons (don't use too many, they'll soak up the soup!)  Lay a slice of provolone on top and broil in oven for about 5-7 minutes.


We preferred the croutons over toast
