BROCCOLI AND CHEESE SOUP


2 tablespoons butter
1/2 an onion, chopped
2 tablespoons flour
3 cups milk
16oz block velveeta
10oz package frozen broccoli, thawed
salt & pepper

Melt butter in stock pot on medium heat.  Once butter is melted, add onions and cook until tender - about 5 minutes.  Add flour and cook for 1 minute, stirring constantly.
Stir in remaining ingredients and simmer until velveeta is melted and broccoli is tender.  Season with salt and pepper to taste.

*This soup is delicious but doesn't make very much.  It's enough for my family of 5 without much leftover, if you'd like to have more double the milk and velveeta.
