1/4 cup butter
1/2 cup brown sugar
8 slices of pineapple
2 cups pancake mix
1 1/2 cup milk (or water)
8 maraschino cherries

In a skillet combine butter and brown sugar until butter is melted and fully incorporated with sugar.  Lay pineapple slices down onto mixture and cook over medium heat until caramelized.  Flip pineapple slices a couple times, when done plate them and set aside reserving caramel sauce in the pan.

Mix pancake mix and milk in a bowl.  Use a 1/4 cup scoop to place them on a hot griddle or pan.  Lay a pineapple slice in the middle of the batter and a cherry in the middle of the pineapple.  Flip when ready.

Serve with reserved caramel sauce.
