CHURROS



1/4 cup cinnamon sugar spice blend; or
            3 tablespoons sugar mixed with 2 tablespoons cinnamon 
1 tablespoon sugar
3 1/4 cups pancake mix
1 cup hot water

Mix tablespoon sugar, pancake mix and hot water until dough forms.  Put in a pastry bag or ziplock bag with clipped corner for piping.

Pipe mixture into hot frying oil, either a fryer or 3" of oil heated in a sauce pan at 375*

Cook for about 2 minutes until golden brown.  Remove from fryer and lay on paper towels, then immediately roll in cinnamon and sugar mixture.
