BLUEBERRY PANCAKES WITH BLUEBERRY TOPPING



2 cups pancake mix
1 1/2 cups milk
1 egg
21oz can blueberry pie filling (or any other flavor - apple/peach)
2 tablespoons butter
1/4 cup lemon juice
1/2 cup brown sugar

Whisk together pancake mix, milk, egg and half the can of pie filling.  Make pancakes in a hot pan or griddle.

Mix together remaining half of pie filling, butter, lemon juice and brown sugar in a small sauce pan.  Cook over medium heat until hot and completely incorporated.  

Serve pancakes with maple syrup and fruit glaze or just fruit glaze.
