These potatoes are delicious and come out crunchy like chips! Our whole family loves them!
Preheat oven to 425*. Slice potatoes very thinly with a sharp knife, being careful not to cut all the way through.
Place potatoes on a metal cookie sheet and drizzle with olive oil and sprinkle with salt and pepper.
Bake for 50 minutes to an hour, keep checking the potatoes to make sure they aren't burning, cooking time will depend on size of potato.
