This was sooooo delicious and easy! Reminded me of walking on the boardwalk in Ocean City, MD in the summer time! I definitely want to add this to my handmade gifts at Christmas time!
1 cup butter (2 sticks)
2 cups brown sugar
1/2 cup light corn syrup (kyro syrup)
1 teaspoon salt
1 teaspoon baking soda
8 cups popped popcorn (about 3 regular bags or 1 cup kernels to 6 tablespoons oil in a stockpot)
Preheat oven to 200*
Combine butter, sugar, syrup and salt in a saucepan and bring to a boil. Let boil for 5 minutes, remove from heat; stir in baking soda.
Line a large roasting pan with wax/parchment paper and lay popcorn on it. Pour caramel over popcorn, stir to coat well.
Bake 1 hour, stirring every 15 minutes. Spread on waxed paper to dry.
