ZOMBIE MEATLOAF


You can use your own meatloaf recipe with the addition of onion and bacon for your zombie features, or try the recipe below!

2 pounds ground beef
1/2 cup onion, finely chopped (with facial features reserved)
1/2 cup fine crushed tortilla chips (about 1 1/2 cups whole chips) (can use breadcrumbs)
3/4 cup BBQ sauce
2 tablespoons your favorite flavor rub (BBQ, Chipotle) (optional)
1 egg
1 cup shredded cheddar cheese
4-5 strips of bacon
1/4 cup of additional BBQ sauce

Cut 2 large strips of onion to resemble eyes and 5-6 small pieces to resemble teeth, set aside.
Mix all ingredients together, except last two, and form into a loaf.

Position the onion eyes and teeth on the loaf to resemble a face and lay bacon down over exposed areas.

Bake at 350* for 1 hour.  Remove from oven and brush bacon and any exposed meat with 1/4 cup ketchup or BBQ sauce.  Bake for an additional 5-10 minutes.  Center of meatloaf temp should be 160*.  Let meatloaf rest for 10 minutes before slicing.
