I've tried several of the fried rice flavor packets that you buy in the store and this was by far the best version, best part is most of the ingredients are pantry staples!

3 cups of cooked white rice, we use jasmine rice (day old or leftover rice)
3 tablespoons sesame oil
1 cup frozen peas & carrots mix
1 small onion, chopped
2 teaspoons minced garlic
3 eggs
1/4 cup soy sauce

Heat sesame oil on medium high heat in large skillet, add peas & carrot, onion and garlic.  Stir until tender.

Lower heat to medium low and push everything aside, crack eggs into pan and stir until scrambled. Add rice and soy sauce and mix all together.

Fry rice until heated through and stir occasionally to prevent burning.
