ALICE SPINGS CHICKEN inspired by Outback Steakhouse

We enjoyed this meal.  We haven't had it at outback before but plan to try it now.  We did not use mushrooms this time but might the next, we also followed the recipe for the honey mustard sauce but a few comments on the original blog sound like outback uses dijon mustard and not yellow.  I have a honey mustard sauce recipe on my blog that uses dijon and either one can be used in this recipe.

4 chicken breasts, pounded to 1/2" thickness
lowry's seasoning salt (we used montreal chicken seasoning) could just use salt and pepper
6 slices of bacon, cooked and crumbed - grease reserved!
1/4 cup mustard
1/3 cup honey
2 tablespoons mayonnaise
2 teaspoons dried onion flakes
1 cup fresh mushrooms, sliced
2 cups colby jack cheese

Rub both sides of chicken with seasoning and let sit for 30 minutes.
Combine mustard, honey, mayo and onion flake for honey mustard sauce.
Saute chicken in bacon grease for 3 minutes each side, or until lightly browned.
Place chicken in a baking dish and spoon honey mustard sauce on top - reserve some sauce for serving.
Layer with mushrooms, bacon and cheese.
Bake at 350* for 20-30 minutes.  Check for doneness.
