CREAMY ONE POT PASTA - DEEP COVERED BAKER VERSION



NOTE:  Each microwave cooks differently and may require longer cooking times to cook the pasta through.  I adapted this recipe from the Chicken Penne Al Fresco recipe and both came out great with the cooking times listed.  Some have had issues getting the pasta cooked through on this recipe, if you experience this issue I would recommend you cook a little longer and stop the microwave twice to stir to ensure the liquid is disbursed evenly, if it still doesn't work there is a great stockpot version of this recipe on the blog as well.  

4 large garlic cloves, minced
1 jar (7/8 oz) sun-dried tomatoes in oil, undrained
4 cups chicken broth
1 lb uncooked penne pasta
1 head broccoli, chopped
2 medium carrots, chopped
4 oz cream cheese
salt and pepper to taste

Place garlic and 1 tablespoon oil from sun-dried tomatoes into DCB. Place DCB in microwave and cook garlic for 1 minute.

Chop tomatoes, broccoli and carrots and add to DCB along with pasta and broth.
Return to microwave and cook for 10 minutes. After 10 minutes, stir and return to microwave for an additional 8 minutes.

Cut cream cheese into 6 cubes. Add cream cheese to DCB and cover, let sit for 5 minutes. Add salt and black pepper to DCB. Stir until cream cheese is melted and fully incorporated.

  1. I think it needs more ckn broth...i just made it and had to pour more orf it in order for.the pasta to get cook...

  2. I've noticed that the amount of broth and cook time depends on the person microwave. It can be tricky, the instructions are what worked with my microwave so each person may have to play a little with this recipe =)

  3. I adore this recipe... however I like it better cooked in a stockpot on top of the stove.

    I use 3 14oz cans of chicken broth. And I add the carrots, broccoli and sun dried tomatoes in with the pasta during the last few minutes.

    Just made this today at a cooking show.

  4. I used 16 oz chicken broth and still have about half of my noodles uncooked. Frustrated

  5. Hello! The recipe calls for 1 lb, 10 oz of broth which is 26 oz, 16 oz is not nearly enough! With that said some still have problems getting the pasta cooked. I added a note with some tips and if it still doesn't work out in your microwave, maybe try the stock pot version. Thank you for your comment!

  6. Maybe you should go back to the recipe and type in 26 oz of Chicken broth instead of the way you have it written, I think that would be more clearer for a lot of cooks.

  7. Thanks for the tip. I added it on the line. I have it written the way it is because that's what it says on the side of the chicken broth that I buy. Hopefully it wont be confusing any long now. :)
