STRAWBERRY 'N CREME CUPCAKES
White cake mix (plus ingredients to make cake)
1 1/4 cups strawberry soda
24 fresh strawberries
White chocolate or vanilla flavored almond bark
2 (8oz) bricks of creamcheese
2 cups powdered suger
1 (8oz) tub of cool whip
2 drops red food coloring, if desired
1. Preheat oven to 350 and prepare cake mix as directed on box, substituting water with strawberry soda. Bake as directed on package.
2. While cupcakes are baking prepare strawberries. Line a sheet pan with parchment paper. Rinse and dry strawberries. Melt a bowl filled about halfway with white chocolate. Microwave in 30 seconds increments, stirring each time until melted - Do not overheat! Dip strawberries halfway into chocolate and lay on sheet pan and put in the fridge to cool and set.
3. While cupcakes are cooling prepare frosting. Beat creamcheese until smooth. Set mixer low speed and slowly beat in powdered sugar. Once sugar is fully incorporated, beat until creamy. Fold in cool whip (do not use mixer). You can add red food coloring to tint frosting pink, if desired.
4. Frost cupcakes and lay a strawberry on top of each one.
