TOASTED PUMPKIN SEEDS

I noticed that the flavor of the seeds was better just after being mixed with seasoning, before roasting for that additional 5 min but this would leave them wet.  Next time I make them I'm going to see if they can air dry without the extra time baking and see how that effects the flavor.

2 cups pumpkin seeds (laid out over night to dry)
1 tablespoon butter, melted
1-2 tablespoons dry seasoning

Heat oven to 300* Cover a cookie sheet with foil and spread out pumpkin seeds.  Bake for 20 minutes.
While seeds are roasting, melt butter and mix with 1-2 tablespoons seasoning.  When seeds are done mix them until well coated with butter mixture and bake for an additional 5 minutes to dry coating.

FLAVOR COMBINATIONS:
Salt
Garlic salt
BBQ rub
Dry ranch dressing packet
Cinnamon and sugar
Cinnamon, cayenne pepper, salt
Lemon pepper
Pumpkin spice and sugar
J.O. Spice (or Old Bay) and cayenne pepper

dill pickle:
2 tablespoons dill pickle juice
1 tablespoon butter, melted
1 teaspoon dill seasoning
2 teaspoons garlic salt




buffalo ranch:
1 tablespoon butter
1 tablespoon buffalo wing sauce
1-2 tablespoons ranch seasoning mix




Directions for microwave:
1. Lay pumpkin seeds out on microwavable plate. Spray with cooking spray. Sprinkle with desired seasoning.
2. Put plate in microwave for 1 minute, after 1 minute stir seeds around and put back in the microwave for another 2 minutes.

* Yes you can toast seeds in the microwave, you get the same affect as if you did the in the oven but you wont burn them! You can use this method with almonds, walnuts, coconut, etc!
