MINI BBQ CHICKEN SANDWICHES



3-4 Boneless, Skinless Chicken Breasts
1 cup ketchup
1/4 cup firmly packed brown sugar
2 tablespoons Sweet & Smoky Barbecue Rub plus extra for chicken
2 teaspoons cider vinegar
garlic clove
Hawaiin rolls

1. Sprinkle chicken breasts with BBQ rub, cook in a covered microwave safe dish for 11 minutes. Check for doneness 165-170 degrees.

2. Mix remaining ingredients in a sauce pan on the stove over medium heat, bring to a boil and simmer for 1 minute.

3. Chop chicken and mix with sauce or serve sauce over chicken on rolls.


I used the Pampered Chef Deep Covered Baker and my chicken came out perfect!
