Mix your choice of chocolate with cool whip and microwave, instead of using whipping cream and burning chocolate on the stove.

Microwave 1 square of baker's chocolate with 3/4 cup cool whip, stir every 30 seconds. Should take 1 to 1 and half minutes.

Microwave 12 andies mints with 3/4 cup cool whip for chocolate mint ganache.
