BARBECUE SAUCES



TRADITIONAL
2 teaspoons vegetable oil
1/4 cup chopped onion
2 cups ketchup
1/2 cup brown sugar
3 tablespoons worcestershire sauce
2 tablespoons lemon juice
dash tabasco sauce (optional)

1. Heat oil in saucepan over medium heat. Add onion and/or garlic. Cook 2 minutes or until tender.

2. Stir in remaining ingredients, bring to a boil. Reduce heat to medium-low. Simmer, covered, 10 minutes.

3. Using a basting brush, brush BBQ sauce on meat during the last 10-15 minutes of grilling to prevent sauce burning.

KANSAS CITY
1 1/2 cups ketchup
1 cup brown sugar
1/2 cup cider vinegar
1/4 cup worcestershire sauce
1 teaspoon chili powder

2 teaspoons dark sesame oil
1/4 cup sliced green onions with tops
1 garlic clove, pressed
2 cups ketchup
1/2 cup brown sugar
2 tablespoons rice vinegar
3 tablespoons soy sauce
2 teaspoons finely chopped fresh ginger

BERRY CITRUS
2 teaspoons vegetable oil
1/4 cup chopped onion
1 1/2 cups ketchup
1 tablespoon worcestershire sauce
2 tablespoons orange juice
1 jar (12 oz) seedless blackberry jam
1 teaspoon dijon mustard
2 teaspoons orange zest

MEXICAN
2 teaspoons vegetable oil
1 garlic clove, pressed
2 cups ketchup
1/2 cup brown sugar
3 tablespoons worcestershire sauce
1/4 cup lime juice
1 can (4 oz) chopped green chilies, drained
2 tablespoons chili powder
1 1/2 teaspoons ground cumin

SWEET & SMOKY
2 teaspoons vegetable oil
1/4 cup chopped onion
1 1/2 cups ketchup
3 tablespoons worcestershire sauce
2 tablespoons cider vinegar
1/2 cup honey
2 tablespoons barbecue seasoning mix
1 teaspoon mustard
