CHICKEN & BLACK BEAN QUESADILLAS



3 Boneless Chicken Breast
1 tablespoon taco seasoning
Appr. 2-4 Tablespoons of Olive Oil
1/4 cup of diced Red Onion
1 Can of Black Beans
2 cups of shredded Cheddar & Pepper Jack Cheese
Soft Tortilla Shells


*Dice your chicken and trim off any unwanted fat
*Saute the chicken in the olive oil until no pink
*Stir in your taco seasoning & diced red onion
*Add more oil if necessary (should not be sticking to pan)
*Add the can of black beans (do not drain can)
*Add about a 1/4 can of water
*Lower heat and let simmer for a few minutes

Meanwhile - you can prep for the quesadillas by shredding your cheese and getting the tortilla shells out

*Heat some more oil in a different large frying pan - coat the entire bottom with oil (not too much)
*Put a tortilla flat in the pan - Keep on a med/low heat
*Add some cheese
*Add some of the chicken & Bean mix
*Add more cheese
*Cover with another tortilla
*Once the shell gets a little crisp - flip

Serve with salsa / guacamole / sour cream

Serve chicken & beans over nachos or rice

or wrap in a tortilla for a different kind of taco
