HAM & EGG CUPS
12 (1-ounce) slices ham
A dozen eggs
3 cups (12 ounces) shredded Cheddar cheese
1/4 teaspoon pepper, or to taste
4 green onions
1. Preheat oven to 400º F. Lightly coat a 12-cup (4 ounces each) muffin tin with cooking spray. Fit each ham slice into each cup (ham ends will be above cup edges). Divide cheese and green onions amoung cups. Sprinkle with pepper. Crack an egg over top. Bake on middle oven rack for 15 minutes. Remove the cups from the muffin tin. Serve warm.
