FIESTA LIME CHICKEN
4 Boneless skinless chicken breasts
1/2 cup Roses sweetened lime juice
Salt and Pepper
8 oz Shredded Colby/Monterey Jack cheese
1/4 cup Ranch dressing
1/2 cup Sour cream
1/4 cup Taco sauce
1. Place chicken in a gallon ziplock bag and pour lime juice over chicken. Let marinate for 8-10 hours. Mix ranch dressing, sour cream and taco sauce in a bowl and place in the fridge. When chicken is ready to cook season with salt and pepper.
2. Cook chicken on grill pan or braise in a hot fry pan. When chicken is cooked through place on a bed of tortilla chips, spoon sauce over chicken and sprinkle shredded cheese liberally on top. Place under a broiler or in the microwave until cheese is melted.
* Serve with a lime wedge as a garnish
