LUMPIA

 

1½ - 2 pounds ground beef 80/20 (can use pork)
1 cup match stick carrots, finely chopped
1 cup cabbage, finely chopped
1 cup green onions, finely chopped (3 bunches)
3 garlic cloves, minced
1 teaspoon salt 
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon soy sauce
lumpia wrappers
oil for frying
sweet chili sauce for dipping

finely chop all ingredients so everything is the same size
place small amount of filling on lumpia wrapper and roll, seal with water
fry a couple lumpia at a time on medium heat for 2 to 3 minutes 
serve with sweet chili sauce

✨makes about 75 lumpia
✨you can freeze lumpia once wrapped and fry when ready to eat
✨can sub 2 cups of coleslaw mix for carrots and cabbage
✨you can sauté filling prior to frying if you'd prefer
