I recently had cucumbers & onions at Lambert's Cafe in Foley, AL and they were the best I've had so I came home and tried to replicate the recipe. I think I gotta pretty close, either way these are delicious too! I used a small glass dish with a lid - it was either a quart or 2 quart size. The dressing didn't cover the cucumbers when I first made it but in the morning it did, after the cucumbers added all their own water. I also heated up the water and sugar together to make a simple syrup, this step isn't really necessary but I did it anyway to ensure the sugar was melted and evenly distributed. If you need to make more dressing it's just equal parts vinegar, sugar & water. Plan to make this the day before serving.
2 cucumbers, peeled & thinly sliced
1/2 onion, sliced
1/2 cup water
1/2 cup sugar
1/2 cup vinegar
put cucumbers & onions in a dish or bowl with a lid
combine water, sugar and vinegar and pour over cucumbers & onions
allow to sit in fridge overnight before serving
