GRANDMA LIPPY'S BEEF & VEGETABLE SOUP

2 to 3lb chuck roast
2 bags frozen mixed vegetables
2 small cans tomato juice
1 can diced tomatoes
beef broth (as much soup as you'd like to make)
3 potatoes, peeled and cut into chunks
salt & pepper

cook roast in oven at 350ยบ for about 3 hours
add mixed vegetables, tomato juice, diced tomatoes and beef broth to a stock pot and simmer
boil potato chunks for 20 minutes in a separate pot of water
when beef is done, shred and add it and potatoes to stock pot
season with salt & pepper to taste
