CABBAGE SOUP

This recipe is from a friend's mom, Margo.  I thought it was amazing and had to have the recipe.  It's definitely good as is, but very easy to alter.  Below is Margo's recipe and below that are a couple changes I made.

2 lbs ground beef
bag frozen mixed veggies
bag frozen corn
can rotel
2 cartons beef broth
2 packets onion soup mix
head of cabbage, chopped into bite size pieces
onion powder
garlic powder
salt & pepper
maggi seasoning or soy sauce

brown and drain ground beef, place in stock pot
add veggies, corn, rotel, broth and onion soup mix, bring to a boil
season with onion & garlic powder, salt & pepper and maggi seasoning to taste
reduce heat and simmer for 30 minutes
add cabbage to soup and boil for about 20 minutes or until cabbage is done

cabbage soup combines vegetables, broth, seasonings and add ins - there are many variations.  Typically you would sauté veggies until soft and cabbage until it wilts add in broth and seasonings and simmer for 20-30 minutes.  Margo's recipe above was amazing but I decided to change it up a little bit and came up with this version.

1 lb ground beef
1 lb spicy ground sausage
carrots, peeled and sliced
2 potatoes, peeled and cut into cubes
2 cartons beef broth
2 packets onion soup mix
head of cabbage, chopped into bite size pieces
onion powder
garlic powder
salt & pepper
maggi seasoning or soy sauce

brown and drain ground meat, place in stock pot
add carrots, potatoes, cabbage, broth and onion soup mix, bring to a boil
season with onion & garlic powder, salt & pepper and maggi seasoning to taste
reduce heat and simmer for 30 minutes
