BEEF BURRITOS

 

we enjoy these burritos with cilantro cream sauce

2 1/2 cups plain greek yogurt
1 can red enchilada sauce
3 lbs ground beef or turkey
3 packs taco seasoning
1/4 cup water
2 cups shredded cheddar cheese
6 light laughing cow cheese wedges
1 bunch of cilantro, finely chopped
2 cans black beans, rinsed and drained
8.5oz ben's original cilantro lime rice (2 cups of rice)
27 8" tortillas

Mix together yogurt and enchilada sauce in a large bowl.  Cook and drain ground beef, add taco seasoning and water and mix until well combined.  Add in cheeses and stir until melted.  Add ground mixture, cilantro, beans and rice to bowl of sauce and stir until well combined.  Scoop 1/2 cup of the mixture into a tortilla and wrap.  

We crisp up the burritos in a buttered pan on the stove just before eating.  
I wrap the leftovers in foil and put half in a gallon bag in the fridge for lunches and the other half in the freezer.
