In Roatan we did a scuba excursion and loved it! We saw many groupers, eels and a spotted eagle ray. This port has a beach but we didn't see it. We ate at Fat Tuesday after diving.

CREAMY ONE POT PASTA - DEEP COVERED BAKER VERSION

NOTE: Each microwave cooks differently and may require longer cooking times to cook the pasta through. I adapted this recipe from the Chicken Penne Al Fresco recipe and both came out great with the cooking times listed. CARAMEL APPLE JELLO SHOTS

2 4oz packages green apple jello 3 cups water 1 cup Crown Royal salted caramel whiskey Dissolve jello in 2 cups boiling water. Once it's cooled to luke warm add 1 cup cool water and 1 cup whiskey. Pour into desired containers and chill until set.
