Favorite cut of steak (filet mignon, porter house, ribeye) minimum 1.5" thick
Favorite steak rub
1/2 stick butter
olive oil
garlic
rosemary
Preheat grill to 225º
Coat steak liberally with seasoning, grill steak with indirect heat until internal temp is 115º
Rest steak while preheating cast iron skillet over medium/high heat until it starts to smoke
Drizzle 2-3 tablespoons of olive oil in skillet and quickly add steak
Add butter, garlic and rosemary to skillet and allow to sear for 2-3 minutes until crust has formed, flip and repeat - base with pan juices.
Allow steak to rest for 10 minutes before slicing.
