1 box Krusteaz honey cornbread mix, plus ingredients to prepare
1 can Mexican corn, drained
1 cup shredded cheddar cheese
1-2 jalapeños, chopped (or jarred hot pickled jalapeños)
Prepare cornbread according to package directions and add in canned corn, cheese and jalapeños. Top cornbread with extra cheese and sliced jalapeños. Bake according to package.
Double for a party!
*next time I'd like to skip the cheese (because I do not taste it) and half the corn (it's a bit too much) and add red bell peppers to give it more color. Try baking in muffin cups - middle has a hard time getting done.
